AUTHENTIC ITALIAN PASTA FROM SCRATCH

- Ingredients for the dough:
- 200 grams of flour
- 2 eggs
- Semolina for dusting
- Ingredients for ricotta cheese and lemon zest filling:
- 150 grams of ricotta cheese
- 15 grams of parmesan cheese
- 2 tablespoon of olive oil
- Salt
- Pepper
- Lemon zest
- Ingredients for aglio, olio e peperoncino sauce:
- 2 garlic cloves
- Salt
- Pepper
- Rosemary, dill or basil herbs
- Chilli pepper
- 20 grams of olive oil
- 30 grams of parmesan cheese
- Lemon zest
Chop the garlic in fine slices with chillis and place them in a pan with the olive oil and pepper.
Turn the heat on medium until the garlic is turning gold, then add the pasta water to the sauce and turn off.
Drain the pasta and cook it in the sauce for about 3 minutes, you can add herbs as you like (dill, rosemary or basil) and grate some lime zest. Switch off and serve with the parmesan cheese on top.
